Pancakes with maple syrup can be tricky if you are looking to pair them with wine but if you don’t feel like drinking wine at the moment, you can try it with black tea or a liqueur muscat.
Pairing these pancakes with a semi-sparkling rosé, preferably one with a touch of sweetness, is acceptable for those with a sweet tooth but only if the topping is on the lighter side.
My suggestion is the Virginia Blush or a sparkling framboise made from raspberry liqueur mixed with your favourite semi-frizzante or sparkling wine. I particularly like framboise with Virginia Blush or De La Bodega but you can always bring out the big guns by opening a bottle of Dom Perignon.
